Mexican Lasagna

I’m pretty sure I’ve posted about this before – but this dish deserves a second post. I am sharing it for all the mama’s out there who need some dinner ideas that are quick & easy to make … but will also satisfy the hungry mouths you’re feeding! I make this casserole at least once a week because it’s my husband’s absolute favorite thing that I make (shh, we won’t tell him how easy it is). Also, it’s pretty healthy at just under 300 calories a serving!

Here is what you’ll need:

(a little over) 1 lb of ground turkey meat

2 wheat tortillas cut into strips

1 can refried black beans

1/2 cup salsa

1 cup shredded cheese

1 packet taco seasoning

1 avocado (optional, for topping)

Directions:

Preheat over to 375 degrees. Grease a 8″ square baking dish. On your stove top, cook the turkey meat on medium high until almost cooked through. Add taco seasoning and cook about 5 more minutes. Layer 1/2 of the turkey meat on the bottom, spread 1/2 the can of black beans over the top, top with 1/4 cup shredded cheese and strips of tortillas. Repeat this step (turkey, beans, cheese, tortilla strips). After laying on the last of the tortilla strips, top with the salsa and the remaining shredded cheese. Bake for 30 minutes. Let stand for 20 minutes after cooking. Optional: Serve with slice avocado on top and some plain greek yogurt (as a sour cream replacement!) Enjoy!
